What is Plant Based

A plant-based diet includes vegetables, fruits, whole grains, and legumes. Legumes ("lay-gumes") are beans, peas, and lentils. A plant-based diet does not include animal products, such as meat (beef, poultry, pork, or fish), dairy products, or eggs. Dr. Esselystn's diet plan – most appropriate for those with known cardiovascular disease or a family history of cardiovascular disease – is also low in fat. Fat intake is highly associated with cardiovascular disease and many other chronic diseases. Dr. Esselstyn recommends that all added oils (including extra virgin olive oil) and high-fat plant foods (such as avocados, olives, nuts, and seeds) be eliminated from the diet to prevent, even reverse, heart disease.
